Hi Lorraine,

I never liked maple syrup either until I had the real stuff! Every Spring my family takes an annual drive to Cartwright's Maple Tree Inn in Angelica, NY for their all you can eat buckwheat pancakes & real maple syrup and we always buy a gallon to bring home, which lasts us the year. I think it was around $40/gal. I'm glad you discovered the real stuff!

It's actually about 60 gallons of sap to ONE gallon of maple syrup. That ratio depends on the year, though. How cold the winter was, how long the sap sat until we cooked it, etc. This was a great spring for sap in our neck of the woods because it was so cold for so freaking long. See, even long winters have a silver lining!
