I LOVE moldy cheese. Stilton is my absolute favorite with gorgonzola a close second. Lately I've been crumbling Stilton into a salad, adding fresh raspberries and using a balsamic vinagrette dressing. YUM! Yay for National Moldy Cheese Day!

LOL -- Mr. L says he wants to celebrate with some Stilton. Um ... I'm boring. I only like cheddar, Parmesan, and mozzarella, but I love the lore of cheese and have a bunch of books on the subject.

I'd be picking the mold off. No mold allowed! I think the recipe would be good with Swiss and cream cheese mixed.
